
These are the cutest monster cereal mini cupcakes you’ve ever seen! Remember when you were a kid and you begged your mom to buy those Halloween cereals from General Mills®. You know the ones, Frankenberry, Booberry and Count Chocula? This year when I saw them on the shelf I just had to. I thought, you’re coming home with me. Well guess what, these really are cereals only a kid could love, lol.

It turns out they don’t really taste like I remember. I also knew I wanted to do something with them for Halloween. Popcorn Balls or Rice Krispy treats came to mind. For a while now I have been trying to master the mini tho. The mini cupcake is something that I have shied away from in general.
The bake time has to be just right. I like to weigh my cupcake batter when I am filling my liners ( I know that’s crazy, but I get such an even bake that way) not really possible with the mini. As a matter a fact if I am using a tulip cupcake liner as I did in my last post for my Cookies and Cream Cupcakes, I not only weigh my batter but I use a cupcake filler. It not only keeps the liner clean but an even bake makes all the difference! The cake to icing ratio, also, has to be just right.
The More I Thought About It The More I Wanted To Take On The Challenge So Mini Monster Cupcakes It Is!
I couldn’t stop thinking about it. I’m totally turning these in to cupcakes. How hard can it be? They are just little cakes! How long am I going to let these mini cupcakes get the better of me? No longer! WE are doing it. It actually was great. They taste great and they were fun. Just having the cereal in the house was a conversation starter honestly! We had friends over to watch the season opening football game and I put a plate of these out. I explained what I was working on and our friend literally asked if I still had any of the cereal left. 😂 He just HAD to have a bowl! See what I mean? It’s a childhood thing 🤷🏻♀️

The step by step ingredients above are for the Booberry flavor mini cupcake. All three mini cakes are make basically the same and all three recipes are below. Booberry Cereal Mini Cupcakes
Ingredients
- 1 cup (120g) flour
- 1 cup (100g) sugar
- ⅛ tsp baking soda
- ¾ tsp baking powder
- ¼ tsp salt
- 6 Tbs melted butter
- 1 egg, room temperature
- 1 egg white, room temperature
- ¼ cup (60g) sour cream
- ¼ cup whole milk
- ½ cup booberry monster cereal
- ½ cup freeze dried blueberries
- ¼ cup blueberry jam
- 1 stick unsalted butter, room temperature
- ¼ cup blueberry jam
- 1 cup freeze dried blueberries
- 2½ cups (300g) powdered sugar
- 2-4 Tbs heavy cream
Instructions
- preheat oven to 350° spray mini cupcake pan and set aside
- sift together flour, sugar, baking soda, baking powder, salt and set aside
- using a food processor or blender, process together freeze dried blueberries and booberry cereal
- melt butter, add room temperature eggs, sour cream, milk, blueberry jam and combine
- add processed blueberries and cereal
- add dry ingredients, combine until batter comes together
- bake 10 min
- beat room temperature butter until light and fluffy 3-5 min
- add a pinch of salt and blue berry jam
- add powdered sugar and 1 Tbs cream
- add cream as needed until frosting is the right consistency
- frost your cakes and enjoy!

Frankenberry Monster Cereal Mini Cupcakes
Ingredients
- 1 cup (120g) flour
- 1 cup (200g) sugar
- ⅙ tsp baking soda
- ¾ tsp baking powder
- ¼ tsp salt
- 6 Tbs melted butter
- 1 large egg, room temperature
- 1 egg whites, room temperature
- ½ tsp vanilla extract
- ½ cup freeze dried strawberries, processed to powder
- ¼ cup strawberry jam
- ½ cup frankenberry monster cereal processed to powder
- ¾ cup buttermilk (room temperature)
- 1 stick unsalted butter, room temperature
- 1 tsp strawberry extract
- 1 cup freeze dried strawberries, processed to powder
- ½ cup frankenberry monster cereal processed to powder
- 2½ cups (300g) powdered sugar
- 2-4 Tbs heavy cream
Instructions
- preheat oven to 350°, spray mini cupcake pan and set aside
- sift together flour, sugar, baking soda, baking powder, salt and set aside
- process to powder (using a mini food processor or blender) ½ freeze dried strawberries and ½ cup frankenberry cereal and set aside
- melt butter, add room temp eggs, vanilla, buttermilk and jam
- add sifted dry ingredients
- add strawberry powder until just combined
- fill cupcake wells 2/3rds full and bake 10 min
- pop out to cool on a rack, make your icing
- beat 1 stick room temp butter until light and fluffy 3-5 min
- add strawberry extract and stawberry powder
- add powdered sugar and 1 Tbs of cream
- add 1 Tbs of cream at a time until frosting is the desired consistency
- frost cooled cakes and enjoy!

Count Chocula Monster Cereal Mini Cupcakes
Ingredients
- 1 cup (120g) flour
- ¼ cup (21g) unsweetened cocoa powder
- ½ cup (100g) sugar
- ⅛ tsp baking soda
- ¾ tsp baking powder
- ¼ tsp salt
- 6 Tbsp melted butter
- 1 egg, room temperature
- 1 egg whites, room temperature
- ½ tsp vanilla bean paste
- ¾ cup buttermilk (room temperature)
- ½ cup count chocula monster cereal
- 1 stick unsalted butter, room temperature
- ⅓ cup (28g) unsweetened cocoa powder
- ¼ tsp vanilla bean paste (or extract)
- 1⅔ cups (200g) powdered sugar
- 2-3 Tbs heavy cream
Instructions
- preheat 350°, spray a mini cupcake pan and set aside
- sift together flour, cocoa, sugar, baking soda, baking powder, salt and set aside
- melt butter, add egg, egg white, vanilla, and buttermilk
- add dry ingredients
- fold in count chocula cereal
- fill mini cupcake wells ⅔rds full, bake 10 min
- pop out and cool on rack
- while cakes cool make frosting
- beat butter until light and fluffy 3-5 min
- add cocoa and vanilla
- add powdered sugar and 1 Tbs cream
- add 1 Tbs cream at a time until frosting is desired consistency
- frost cooled cakes and enjoy!
