First of Three Pumpkin Recipes
Enter the pumpkin bread! This is a family favorite. Swapping the all purpose flour for whole wheat only makes this taste better. It has a nuttier flavor that lends itself nicely to the pumpkin and accompanying spices. Another exchange we are going to make is apple sauce instead of oil. This is going to make your bread so moist and leave out all that fat! Comes together in one bowl with a whisk and bakes in an hour. This might as well be labeled a quick bread. This will be perfect with your morning coffee!

Pumpkin Bread
Ingredients
- 600 g sugar (3 cups)
- 420 g whole wheat flour (3ยฝ cups)
- ยฝ tsp baking powder
- 2 tsp baking soda
- 1ยฝ tsp salt
- 1 tsp cloves
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 cup applesauce (any kind)
- 15 oz can pumpkin
- 4 eggs
- 1 cup water
Instructions
- preheat oven to 350ยฐ
- spray a bundt pan and set aside
- combine ALL dry ingredients in a large bowl (flour, sugar, salt, baking powder, baking soda, cloves, cinnamon, nutmeg)
- make a well in the center
- add eggs, pumpkin, applesauce and water
- stir until well combined
- pour into prepared bundt pan
- bake for 1 hour and test (my oven takes 1 hour and 4 minutes)
- cool on a wire rack in pan for 15 min
- remove from pan and cool completely on wire rack.

Next we have a high protein pumpkin pie latte muffin. We all know protein is all the rage right now. These will be a perfect midday snack. A quick grab while you are all busy bustling in the kitchen trying to pull together your family meal. These will tide you over as well as keep you in the spirit while your gravy is not cooperating.

Pumpkin Pie Latte Protein Muffins
Ingredients
- 1 cup (150g) all purpose flour
- 2 cups (240g) cake flour
- 1ยพ cups (350g) sugar
- 1 cup (80g) Select Pumpkin Pie Protein powder
- 1 tbsp baking powder
- ยฝ tsp baking soda
- ยฝ tsp salt
- 10 tbsp unsalted butter, melted
- 2 large eggs
- 1ยฝ cups (340g) greek lowfat vanilla yogurt
- 1 cup (244g) canned pumpkin
- 1 cup fresh brewed black coffee
- 3 tbsp unsalted butter, room temperature
- 4 oz cream cheese, room temperature
- 2 cups (450g) powdered sugar
- ยฝ tsp pumpkin pie spice
Instructions
- preheat oven to 350ยฐ and line a cupcake pan with paper or foil liners
- sift together flour, cake flour, sugar, protein powder, baking powder, baking soda and salt, set aside
- combine in a seperate bowl, eggs, yogurt, pumpkin and melted butter
- add wet ingredients to flour mixture , combine well
- fill cupcake liners ยพ full
- bake for 18-20 min cool on rack
- while muffins are still warm baste the tops with fresh brewed black coffee and let it soak in
- combine room temperature cream cheese and butter until creamy and smooth
- add powdered sugar and pumpkin pie spice and combine until smooth
- ice and enjoy

The Third of Your Pumpkin Recipes For The Week
Last but not least, a pumpkin whoopie pie! Frankly it’s just fun to say. By now you’ve had so much food in that a bite sized dessert might be just the way to go! This is a new recipe this year I hope you enjoy it as much as my family did. A bite of pumpkin pie with a cream cheese frosting center. What’s not to like? Happy Thanksgiving everyone!

Pumpkin Whoopie Pies
Ingredients
- 220 g brown sugar (1 cup)
- 1 stick unsalted butter room temperature
- 8 oz canned pumpkin
- 1 lg egg, room temperature
- ยฝ tsp vanilla bean paste
- 225 g all purpose flour (1ยฝ cup)
- ยพ tsp salt
- ยฝ tsp baking powder
- ยพ tsp cinnamon
- ยผ tsp ginger
- ยผ tsp cloves
- 4 oz cream cheese, room temperature
- 2 tbsp unsalted butter, room temperature
- ยฝ tsp vanilla bean paste
- โ tsp salt
- 1-2 cups powdered sugar
Instructions
- preheat oven to 350ยฐ, line cookie sheet with parchment and set aside
- cream together brown sugar and butter until light and fluffy (about 2 min)
- add egg, vanilla and pumpkin, mix until combined
- sift together flour, spices and baking soda, baking powder and salt
- add dry ingredients until batter comes together
- unsing a small cookie scoop, scoop batter onto cookie sheet and bake 10-12 minutes (using a cookie scoop matters here, you want them to all be about the same size so you can put tops and bottoms together)
- cool for 2 minutes on tray then remove to wire rack to cool completely
- mix together cream cheese, 2 tbsp butter, pinch of salt, ยฝ tsp vanilla until nice and smooth
- add powdered sugar until icing consistency
- fill piping bag and pipe one flat side of pie, topping with flat side of another pie!
