Ingredients
  

  • 220 g brown sugar (1 cup)
  • 1 stick unsalted butter room temperature
  • 8 oz canned pumpkin
  • 1 lg egg, room temperature
  • ½ tsp vanilla bean paste
  • 225 g all purpose flour (1½ cup)
  • ¾ tsp salt
  • ½ tsp baking powder
  • ¾ tsp cinnamon
  • ¼ tsp ginger
  • ¼ tsp cloves
  • 4 oz cream cheese, room temperature
  • 2 tbsp unsalted butter, room temperature
  • ½ tsp vanilla bean paste
  • tsp salt
  • 1-2 cups powdered sugar

Instructions
 

  • preheat oven to 350°, line cookie sheet with parchment and set aside
  • cream together brown sugar and butter until light and fluffy (about 2 min)
  • add egg, vanilla and pumpkin, mix until combined
  • sift together flour, spices and baking soda, baking powder and salt
  • add dry ingredients until batter comes together
  • unsing a small cookie scoop, scoop batter onto cookie sheet and bake 10-12 minutes (using a cookie scoop matters here, you want them to all be about the same size so you can put tops and bottoms together)
  • cool for 2 minutes on tray then remove to wire rack to cool completely
  • mix together cream cheese, 2 tbsp butter, pinch of salt, ½ tsp vanilla until nice and smooth
  • add powdered sugar until icing consistency
  • fill piping bag and pipe one flat side of pie, topping with flat side of another pie!
