preheat oven to 350°, line cookie sheet with parchment and set aside
cream together brown sugar and butter until light and fluffy (about 2 min)
add egg, vanilla and pumpkin, mix until combined
sift together flour, spices and baking soda, baking powder and salt
add dry ingredients until batter comes together
unsing a small cookie scoop, scoop batter onto cookie sheet and bake 10-12 minutes (using a cookie scoop matters here, you want them to all be about the same size so you can put tops and bottoms together)
cool for 2 minutes on tray then remove to wire rack to cool completely
mix together cream cheese, 2 tbsp butter, pinch of salt, ½ tsp vanilla until nice and smooth
add powdered sugar until icing consistency
fill piping bag and pipe one flat side of pie, topping with flat side of another pie!
