You Can’t Make Mini Apple Pies Without Pie Crust
It’s November which means, yep you guessed it, pie crust! Now, again I am going to remind you that making my pie crust only takes 6 ingredients and 15 minutes. It takes less time and cost less than going to the store and buying crust that comes in a box. Read those ingredients on that box! If you can pronounce them I guess you can ingest them but I’m not sure why you would. Flour, sugar, salt, butter, milk and egg. You can pronounce all of those and you’ll know what you are eating. Your Mini Apple Pies Are Going To Need Some Apple Filling
Now we need some mini apple pie filling. Since we are making mini pies we are going to dice our apples small. Our filling will cook up nice and fast. This recipe will yield enough filling for 12 mini pies. It’s sweet and tart and rich, everything we want our apple pie filling to be. The great thing about this filling is since it’s mini, it can be used for other things. Skip the crust and put some over vanilla ice cream. Use it as filling for vanilla cupcakes. Really the world is your oyster here. Except don’t put this on oysters. I don’t think this will taste good over oysters…
The Best Tool, Gadget Maybe Ever
One more thing you are going to need to make these pies is this mini pie mold. It’s inexpensive. Available on the line just like everything else. You can have this in two days. This can come in the same box as your wool socks and your diamond earrings. I know we all have a love/hate relationship with Amazon but this is where it falls into the love category.



Bake Them Now, Bake Them Later
Now you can make these pies, bakes these pies, eat these pies and your belly will be so happy! OR I think the best thing about these little pies is you can freeze them and bake them later! Wrap them individually in saran wrap and throw them in a freezer bag. They will last for up to three months. Let me clarify that. They are good for three months in your freezer but they won’t stay in your freezer that long. You will use them way quicker then that. Pull out however many you need. Maybe you are hosting a dinner party for 6, then pull out and bake 6 pies. Is there a holiday right around the corner and you want to take care of dessert weeks ahead of time? I’m telling you these are easy, they are yummy and you will be thanking me. Then you’ll be asking me for more ideas….I gotta go. I got work to do!

Mini Apple Pies
Equipment
- 1 mini pie mold available on amazon
Ingredients
- 9" pie crust
- 1 batch mini apple pie filling
- 1 egg, beaten
- 1 tbsp coarse sugar (optional)
Instructions
- roll out a 9" pie crust to 1/8" thickness
- using the pie mold cut out 6 tops and 6 bottoms
- turn pie mold over, put one bottom and one top in the mold stretching the dough to cover the flat edge of mold
- fill bottom of pie with 2 tablespoons of apple filling
- egg wash the rim of the top and close the mold to seal the edges
- I like to roll the edges to further seal the pie to prevent the filling from leaking during baking
- place pies on a parchment lined cookie sheet and place in the refrigerator to chill while you preheat your oven to 350ยฐ
- when oven is preheated, remove pies from refrigerator, egg wash top and bottom of pie, sprinkle with coarse sugar
- bake until golden brown and filling is bubbling, 30-35 minutes
