Who doesn’t love some St. Paddy’s Day brownies this time of year. These were fun to make. I am a huge fan of the chocolate and mint combination. Always have been. I used a package of Mint Oreos here but if you had a package of Girl Scout Thin Mints they would be amazing here also.
Why Make Boxed Brownies When You Could Make St. Paddy’s Day Brownies From Scratch
There is nothing wrong with a boxed brownie mix. They are pretty reliable. However, I love to make them from scratch. They seem just as easy to me and there is just something satisfying about a scratch baked sweet treat. I have always been a huge fan of chocolate and mint together so this combo was sort of a no brainer. You could truly use any cookie or candy to supplement your homemade (or boxed) brownies.
Using unsweetened chocolate will give you more chocolate flavor than a semi-sweet or bittersweet. As soon as you sweeten chocolate the chocolate flavor is diminished some. This recipe will bring you strong chocolate flavor and adding a good dose of vanilla will counteract any bitterness.
We are also going to switch out the all-purpose flour for cake flour. When you use a lot of chocolate (which contains a lot of starch) using a cake flour (a lower protein flour) will bring a tender texture as opposed to a gritty one which could happen with all purpose flour in this case. St. Paddy’s Day Brownies
Ingredients
- 1¼ cups (163g) cake flour
- ¾ tsp baking powder
- ½ tsp salt
- 6 oz unsweetened chocolate, chopped fine
- 1½ sticks unsalted butter (12 tbsp)
- 2⅓ cups (467g) sugar
- 4 eggs
- 1 tbsp vanilla bean paste or extract
- 24 Mint Oreo cookies
Instructions
- preheat oven to 325°, prepare 9X13 baking pan by lining with tin foil and lightly spraying with cooking spray
- sift together flour, baking powder and salt, set aside
- melt chocolate and butter in a bowl in the microwave by either using the "melt butter" setting or 30 seconds at a time stirring until smooth
- gradually mix in sugar
- add eggs one at a time, stirring until well combined
- stir in vanilla
- fold in dry ingredients until well combined
- add half brownie batter to pan
- add a layer of whole oreo cookies (use 15-18 cookies)
- top with remaining batter
- crush remaining cookies and sprinkle over the top
- bake for 30-32 minutes
- cool for 20 min in pan then remove, using the foil, to a rack to cool completely, slice and enjoy!
