St. Paddy's Day Brownies

These are fudgy, chewy, minty and amazing!!!

Ingredients
  

  • cups (163g) cake flour
  • ¾ tsp baking powder
  • ½ tsp salt
  • 6 oz unsweetened chocolate, chopped fine
  • sticks unsalted butter (12 tbsp)
  • 2⅓ cups (467g) sugar
  • 4 eggs
  • 1 tbsp vanilla bean paste or extract
  • 24 Mint Oreo cookies

Instructions
 

  • preheat oven to 325°, prepare 9X13 baking pan by lining with tin foil and lightly spraying with cooking spray
  • sift together flour, baking powder and salt, set aside
  • melt chocolate and butter in a bowl in the microwave by either using the "melt butter" setting or 30 seconds at a time stirring until smooth
  • gradually mix in sugar
  • add eggs one at a time, stirring until well combined
  • stir in vanilla
  • fold in dry ingredients until well combined
  • add half brownie batter to pan
  • add a layer of whole oreo cookies (use 15-18 cookies)
  • top with remaining batter
  • crush remaining cookies and sprinkle over the top
  • bake for 30-32 minutes
  • cool for 20 min in pan then remove, using the foil, to a rack to cool completely, slice and enjoy!

Notes

brownies can be stored in an airtight container on the counter for 3 days or in the fridge for 1 week.
