Well it’s exactly what it sounds like, honestly. We are going to dice our fruit smaller. Not only will our filling cook up faster but it will allow us to use it in smaller desserts! There are so many ways other than mini pies to use this filling. Having a jar of this in the refrigerator has become a fall staple for me.

I initially made this filling for Mini Apple Pies. Which are amazing and you really should to try them. I will once again beg you to make your own crust. If you don’t have one, make mine! The recipe is right here. It takes 6 simple ingredients and 15 minutes to make. It’s so much better than the store bought. Have you read the ingredients on that box? Can you pronounce all of the ingredients on that box? I guess if you can pronounce them you can go ahead and ingest them but why would you? Making your own pie crust really makes these a show stopper. I am telling you your guests will be so impressed.
You can also just skip the crust, warm this filling and put it over vanilla ice cream. This filling would taste great in a cinnamon cupcake with a cinnamon buttercream! Did you grow up eating cinnamon toast? Here is an idea, elevate your cinnamon toast by spreading a little apple pie filling over your buttered, sugared toast! You get the idea!

The Best Mini Apple Pie Filling Hands Down
Ingredients
- 2-3 large granny smith apples diced dice granny smith slightly smaller than the sweeter apples since they will retain their shape during cooking
- 3 large honey crisp (or other sweet red apple) diced dice sweeter apples just a lttle larger than granny smith apples since they will break down during cooking quicker
- 1 large lemon, juiced
- 100 g sugar (1/2 cup)
- 110 g dark brown sugar (1/2 cup)
- 3.5 tsp apple pie spice
- 2 tbsp salted butter
- 1/3 cup water
- 2 tbsp cornstarch
- 1.5 tbsp cold water
Instructions
- Peel and dice the apples one at a time, placing in a bowl with the lemon juice to prevent browning
- once all apples are diced and coated with lemon juice; add to pot with sugar, brown sugar, apple pie spice, butter and water
- over medium heat bring to a boil
- once boiling, lower heat to a simmer and cook for @8 minutes
- combine cornstarch and cold water; add to apples until filling thickens
- remove from heat and cool
- store in an airtight container in the refrigerator for up to 2 weeks1
