Don’t let these Vanilla Cream Scones scare you! They are packed with the most amazing vanilla flavor and the spider web is completely optional! I have been trying to come up with a fun halloween treat to post but wanted it to be something you could still make year round not just in October. You are going to be pleasantly surprised just how easy these are and how fun they are to make.
Let’s start with the vanilla in these Vanilla Cream Scones. I love working with vanilla, especially a whole bean pod.
Let me tell you why. It is amazing just how fragrant a whole vanilla bean pod is. After you remove all of the seeds from inside you can then take the empty pod and place it in a mason jar with 2 cups of sugar to make vanilla sugar. It is so good…in and on everything. If you like vanilla then you have to try this. You can bake with it, put it in your coffee, sprinkle it on your cereal seriously anything that you use sugar for you can use vanilla sugar and it’s just better.
Vanilla is the new Chocolate!
It’s actually not but when I was a kid I definitely preferred chocolate. As an adult it’s vanilla all the way for me and I loved working on these scones. Requiring simple ingredients they not only come together quick but they bake fast too. You are going to love this easy quick treat.
A classic scone is essentially just a fluffy biscuit. They can be mildly sweet or savory and are on the dryer side. Which is why the sweet versions scream brunch or coffee treat to me. Using cream instead of milk or buttermilk will add to the rich flavor and give the perfect texture. For this recipe I also wanted to bring a lot of vanilla flavor to the front so we are going to use a whole vanilla bean pod’s worth of seeds to flavor your heavy cream. We will use vanilla bean paste in the glaze as well to really bring it home.

I don’t know how I missed this picture but you are going to combine 2 cups of powdered sugar with 1/4 cup water and 1 tbsp vanilla bean paste. Stir until glaze consistency. Can add more water or sugar to get to the right consistency.

Vanilla Bean Scones
Ingredients
- 2 cups (300g) all-purpose flour
- ⅓ cup vanilla sugar (or regular sugar)
- 1 tbsp baking powder
- ½ tsp salt
- 6 tbsp unsalted butter, chilled and cubed
- 1¼ cup heavy cream
- 1 whole vanilla bean (optional) or 1 tbsp vanilla bean paste or extract
- 2 cups (225g) powdered sugar
- 2 tsp vanilla bean paste or extract
- 3-4 tbsp water (more if needed)
Instructions
- Preheat oven to 450℉.
- If using a whole vanilla bean pod, remove ends with a paring knife, filet the whole bean and open flat. Using the straight edge of the knife scrape out all of the black seeds and add to your heavy cream.
- Combine heavy cream and vanilla bean paste (or extract) keep chilled.
- Sift together flour, sugar, baking powder, and salt.
- Using a pastry blender or a food processor cut in the chilled butter into your flour mixture.
- Add vanilla cream and stir by hand until mostly incorporated.
- Pour out onto a floured work surface and bring dough together completely by hand.
- Roll dough into a 9" circle and cut into 8 wedges.
- Place wedges on a baking sheet lined with parchment paper and bake for 8-11 minutes. Bake time will depend on how thin you rolled out your circles. They bake fast so keep an eye on them.
- Cool for 2 minutes on tray and move to a rack to cool completely.
- Combine powdered sugar, 2 tsp vanilla bean paste or extract and water to make a white glaze.
- When scones are completely cooled dip tops into glaze and put back on the cooling rack until glaze is set.
- Decorate however you like or not at all!
