Vanilla Bean Scones

Don't let the look of these scones scare you, they are just packed with the most amazing Vanilla Bean flavor and are perfect with your morning coffee or for a snack midday. Spider web not required for enjoyment.

Ingredients
  

  • 2 cups (300g) all-purpose flour
  • cup vanilla sugar (or regular sugar)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 6 tbsp unsalted butter, chilled and cubed
  • cup heavy cream
  • 1 whole vanilla bean (optional) or 1 tbsp vanilla bean paste or extract
  • 2 cups (225g) powdered sugar
  • 2 tsp vanilla bean paste or extract
  • 3-4 tbsp water (more if needed)

Instructions
 

  • Preheat oven to 450℉.
  • If using a whole vanilla bean pod, remove ends with a paring knife, filet the whole bean and open flat. Using the straight edge of the knife scrape out all of the black seeds and add to your heavy cream.
  • Combine heavy cream and vanilla bean paste (or extract) keep chilled.
  • Sift together flour, sugar, baking powder, and salt.
  • Using a pastry blender or a food processor cut in the chilled butter into your flour mixture.
  • Add vanilla cream and stir by hand until mostly incorporated.
  • Pour out onto a floured work surface and bring dough together completely by hand.
  • Roll dough into a 9" circle and cut into 8 wedges.
  • Place wedges on a baking sheet lined with parchment paper and bake for 8-11 minutes. Bake time will depend on how thin you rolled out your circles. They bake fast so keep an eye on them.
  • Cool for 2 minutes on tray and move to a rack to cool completely.
  • Combine powdered sugar, 2 tsp vanilla bean paste or extract and water to make a white glaze.
  • When scones are completely cooled dip tops into glaze and put back on the cooling rack until glaze is set.
  • Decorate however you like or not at all!

Notes

You can cut the dough in half and make two 6" circles for a total of 16 smaller wedges.  If you do this adjust your bake time a little.  Start checking at 7 minutes.  Serving size would be two small scones.
