Little ones will love this dark chocolate monster cookie loaded with candy corn and peanuts. So fudgy and crunchy and perfectly sweet!

Ingredients
  

  • 2 cups (300g) all purpose flour
  • cup (84g) dark cocoa
  • tsp baking soda
  • ½ tsp salt
  • 2 sticks unsalted butter room temperature
  • ¾ cups (165g) brown sugar
  • cups (134g) white sugar
  • tsp vanilla bean paste (or extract)
  • 2 eggs
  • tsp espresso powder
  • 1 cup (120g) peanuts
  • ¾ cup (130g) candy corn
  • candy eyes (optional)

Instructions
 

  • preheat oven 350℉, line two cookie sheets with parchment and set aside
  • sift together flour, cocoa, baking soda, salt and add peanuts and candy corn, set aside
  • combine eggs and vanilla then sprinkle the espresso powder on top and set aside (espresso powder will start to foam a little)
  • cream together brown sugar, white sugar and butter until creamy
  • add eggs, vanilla and espresso mix
  • add dry ingredients and mix until just combined
  • using a cookie scoop, drop cookie dough on to cookie sheets and bake for 10 minutes (until edges are lightly browned)
  • IF ADDING EYES DO THAT NOW and cool for two minutes on cookie sheet
  • move to rack to cool completely

Recipe makes 36 cookies, serving size two cookies.
