(300g) all purpose flour

(84g) dark cocoa

baking soda

salt

unsalted butter room temperature

(165g) brown sugar

(134g) white sugar

vanilla bean paste (or extract)

eggs

espresso powder

(120g) peanuts

(130g) candy corn
candy eyes (optional)
Instructions
preheat oven 350℉, line two cookie sheets with parchment and set aside
sift together flour, cocoa, baking soda, salt and add peanuts and candy corn, set aside
combine eggs and vanilla then sprinkle the espresso powder on top and set aside (espresso powder will start to foam a little)
cream together brown sugar, white sugar and butter until creamy
add eggs, vanilla and espresso mix
add dry ingredients and mix until just combined
using a cookie scoop, drop cookie dough on to cookie sheets and bake for 10 minutes (until edges are lightly browned)
IF ADDING EYES DO THAT NOW and cool for two minutes on cookie sheet
move to rack to cool completely
