These Triple Chocolate Cabernet Brownies are rich, fudgy and delicious. The red wine in this recipe is going to check a couple of boxes for you. First it will help to create a tender texture. Second it will enhance the flavor of the dark chocolate so when you add your milk and white chocolate to the mix your flavors will be in a perfect balance.

When I post a cookie recipe I will be harping on you to cream your butter and sugar. You are going to need the air in the cookie dough so that your cookie, as it bakes, not only spreads out a little but also puffs up. So you end up with a cookie that is soft on the inside and crispy around the edges.
For a brownie recipe we do NOT want air in our batter. We want the batter to bake and almost not rise at all. Staying dense and chewy or fudgy. The way we accomplish this is by mixing our sugar with MELTED butter. We are not creaming these two together for a brownie batter. As a matter of fact we aren’t even going to use a mixer. We will mix it by hand so we don’t whip any air in to our batter. The less air the fudgier the result.
Why shouldn’t I just make brownies from a box?
Well you can. You can do that. Just buy a box. Add your eggs and oil and they will probably taste great. I have done a ton of baking over the years but I am in no way formally trained. Most of us are self taught in the kitchen, right? I started this blog because I wanted to learn the science behind baking and the different techniques for cookies, cakes, pies, brownies, etc.
When I compared baking from scratch to the convenience of store bought treats I became aware of all of the preservatives and chemical ingredients in our processed (boxed) foods. It’s just so much better to make it from scratch. Once you start to bake from scratch you realize that it doesn’t take a whole lot of ingredients or really that much more time for that matter. So I’ll make a deal with you. I’ll do the research so you don’t have to and we will just meet back here once or twice a week and you can just follow along!

Triple Chocolate Cabernet Brownies
Ingredients:
- 1 1/4 (188g) cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup (150g) sugar
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup cabernet sauvignon red wine
- 10 oz bag dark chocolate chips
- 1/2 cup (100g) white chocolate chips
- 1/2 cup (100g) milk chocolate chips
- 1 teaspoon vanilla bean paste (or extract)
- 2 eggs room temperature
- 1/2 cup (115g) applesauce
- 2 tablespoons powdered sugar
Directions:
- Preheat oven to 350°
- Sift flour, baking soda and salt together. Set aside.
- Put sugar, wine, butter and vanilla paste (or extract) in microwave safe bowl. Pop in to the microwave for 45 seconds. Stir and continue to microwave 30 seconds at a time until butter is melted and the sugar is incorporated.
- Add 1 cup (200g) dark chocolate chips and return to the microwave for 30 seconds at a time until chocolate is melted and batter is combined.
- Combine eggs and applesauce together. Add to chocolate and combine.
- Fold in dry ingredients until just combined. Batter will be a little lumpy and that is ok.
- Gently stir the rest of the dark chocolate chips, milk chocolate chips and the white chocolate chips.
- Pour into a lightly greased 8×12 (or 9×13) and bake for 20-23 minutes.
- Cool completely in the pan.
- Cut into squares and dust with powdered sugar.
