


Here are three thumbprint flavors you are going to love. Welcome back to my series of “cookies that are just not my favorite”. Where I take a cookie that is not my favorite and make it a favorite by changing the flavor. Okay so let’s talk about it!
The Vintage Thumbprint Cookie
You know the one I mean. I’m sure your Mom made them too. That round white cookie she rolled in crushed walnuts. Then using her thumb she made a little well in the center and filled it with raspberry jam. This was my least favorite cookie on the cookie plate when I was a kid. I am sure at the time it was the walnuts that were the deterrent.
So what did I like as a kid? I truly gave that some thought. These three things came to mind. I preferred white chocolate bunnies over milk chocolate bunnies at Easter. Nothing beats the combination of caramel and chocolate, so a Rolo was also at the top of my list. Lastly, I could eat a peanut butter and jelly sandwich every day for lunch, still! I don’t but I could.
Three New Thumb Print Flavors Are Born
Enter the White Chocolate Raspberry thumbprint. This is just a lovely combination of flavors. They perfectly complement each other and they definitely elevate this old timey cookie! You have to give this one a try!
A note before you begin? I am not sure where along the way in my baking journey I stopped using a kitchen spoon and started using an actual cookie scoop but it was the best thing I ever did. It really does make a difference. All of your cookies will not only be the same size, look the same they will BAKE the same. If you don’t have one I really recommend investing in one. You can get one on Amazon here. They are not expensive and they are worth the trouble! Ok back to it!
White Chocolate Raspberry Thumbprints
Ingredients
- 1 stick unsalted butter, room temperature (ยฝ cup)
- 300 g sugar (1ยฝ cup)
- 123 g sour cream (ยฝ cup)
- 2 eggs
- 2 tbsp whole milk
- 1 tbsp vanilla bean paste (vanilla extract is fine also)
- 400 g all purpose flour (2โ cups)
- 180 g oatmeal (2 cups)
- 1 tsp baking soda
- 1 tsp salt
- 11 oz white chocolate chips
- 1ยฝ cups raspberry seedless jam
Instructions
- preheat oven to 350ยฐ, line two large cookie sheets with parchment paper, set aside
- cream together butter and sugar
- combine sour cream, eggs, vanilla and milk, add to butter and sugar until well mixed
- sift together flour, oatmeal, baking soda, salt and 6 oz (@ยฝ of the bag) of white chocolate chips
- pour wet ingredients in to dry ingredients and mix until dough comes together
- using a small cookie scoop, scoop out onto cookie sheet
- make a small valley with a finger in the center of cookie
- fill with โ -ยผ tsp of raspberry jam
- bake 8-9 minutes until edges are just starting to brown
- cool for 2 minutes on tray then move to cooling rack to cool completely
- melt the rest of the white chocolate according to the package directions and drizzle over cookies, let set.
Next Let’s Turn That Rolo Into A Thumbprint
I love a Rolo. Chocolate and Caramel are another classic combination that always works. This chocolate dough rolled in crushed toasted pecans turns this into a Turtle Thumbprint. These are so good and they are bite size so feel free to have two or three!
Turtle Thumbprints
Ingredients
- 1 cup (150g) all purpose flour
- โ cup dutch process cocoa
- 1 stick unsalted butter, room temperature
- โ cup (134g) sugar
- ยผ tsp salt
- 1 egg, seperated
- 2 tbsp whole milk
- 1 tsp vanilla bean paste or extract
- 1 cup finely chopped pecans
- 14 kraft caramels, unwrapped
- 3 tbsp whipping cream
- ยฝ cup chocolate melting wafers
Instructions
- sift together flour and cocoa, set aside
- beat butter for 30 seconds then add sugar and salt, beat until combined
- add egg yolk, milk and vanilla, combine well
- beat in flour until just combined
- cover dough or wrap in plastic and chill for 1 hour
- preheat oven to 350ยฐ, line cookie sheet with parchment paper and set aside
- when oven is preheated, toast crushed pecans for 5 minutes on a piece of parchnment paper, pour into a bowl
- shape dough into 1" balls, roll in lightly beaten egg white and then in finely crushed pecans
- place 1" apart on cookie sheet, using the handle of a wooden spoon make an indent in the center of each cookie and bake for 8-10 minutes
- remove from oven and if needed make the center cavity again and let cool completely
- melt caramels and cream on stove until smooth and creamy
- spoon about 1 teaspoon of caramel into the center cavity in cookie, let set
- melt chocolate wafers according to package directions and drizzle over cookies, let set

These Peanut Butter And Jelly Thumbprints Are Like Biting Into An Actual Sandwich
This peanut butter dough is so good! I am telling you, you won’t even miss the bread. You can also use your favorite jelly here but I am partial to strawberry. Rolling these in crushed peanuts definitely adds to the flavor and the texture. Definitely a step you don’t want to skip.
Peanut Butter and Jelly Thumbprint
Ingredients
- 2 sticks unsalted butter, room temperature
- 240 g peanut butter (1 cup) do not use Natural Peanut Butter in this recipe
- 220 g brown sugar (1 cup)
- 100 g sugar (ยฝ cup)
- 1ยฝ tsp baking powder
- 1 tsp salt
- 1 egg
- 2 egg yolks
- 1 tsp vanilla bean paste (vanilla extract is fine)
- 375 g all purpose flour (2ยฝ cups)
- 12 oz strawberry jam (or jam of your preference)
- 1 cup peanuts (crushed)
Instructions
- sift together flour, baking powder and salt, set aside
- blend together butter and peanut butter until smooth
- add both sugars to butter and peanut butter and beat until well combined
- add egg, egg yolks and vanilla
- beat in flour until dough comes together
- wrap tightly in plastic wrap and chill in fridge for 30-60 min
- preheat oven to 350ยฐ, line a cookie tray with parchment paper
- using a small cookie scoop, roll dough into a ball, roll in crushed peanuts
- poke hole in center of ball using handle of wooden spoon or pinky, fill with โ -ยผ tsp of jam
- bake 7-9 minutes, cool for 2 min on tray, remove to wire rack to cool completely
