The best part of this recipe is there are only three ingredients. That’s it. THREE! Or maybe the best part is that they are GLUTEN FREE. A sweet treat just doesn’t get easier than this one.

Yes. Yes they are. When you have a recipe that comes together this easy with these three GLUTEN FREE ingredients how can you not take 20 minutes and bake tonights after dinner treat?
I did not grow up eating almond paste cookies but if my mom had known how easy they were to make I am sure I would have. Again, I am going to say if you are an almond lover then this amazing cookie is for you. They have the most amazing texture. That chewy center is addictive and they are a little like potato chips. I dare you to eat just one.

Step by step.
Almond Paste Cookies
Ingredients
- one 8oz. box of SOLO Almond Paste
- 1/2 cup sugar + 1 Tablespoon for sprinkling onto the top of unbaked cookies
- 1 extra large egg white + egg white to wash tops of unbaked cookies
- slivered almonds (optional)
- pearl sugar (optional)
Directions
- Preheat oven to 325° and line a cookie sheet with parchment paper.
- In a mini food processor, shred the almond paste (if you don’t have a mini food processor you can shred by hand or just break in to small peices).
- Add egg white and sugar.
- Process all three ingredients (or using a hand mixer to combine ingredients) until moist and tacky dough consistency.
- Fill a piping bag with a large tip and pipe round cookies onto cookie sheet.
- Brush with egg white, sprinkle with sugar, add three slivered almonds (and a little pearl sugar-optional)
- Bake for 25-28 minutes until edges are golden brown.
- Move parchment paper, with the cookies, on to a rack to cool. When completely cooled, peel off of parchment and ENJOY!
