Who's team pumpkin 🎃out there? We are calling all pumpkin lovers to the table because it's time. This pumpkin bread is so delicious you will never guess it's a healthier lighter recipe. Quick, easy and full of fall spices to warm your belly. Cool, crisp, gray day not required for consumption.

Ingredients
  

  • cups (420g) whole wheat flour
  • 2 cups (400g) sugar
  • 1 cup (200g) monk fruit sweetener
  • ½ tsp baking powder
  • 2 tsp baking soda
  • tsp salt
  • 1 tsp ground cloves
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 cup applesauce
  • 16 oz canned pumpkin
  • 4 eggs
  • 1 cup water

Instructions
 

  • preheat oven to 350°, spray a bundt pan with cooking spray and set aside
  • in a large bowl, sift together- flour, sugar, monk fruit, baking powder, baking soda, salt, spices (all dry ingredients) and make a well in the center
  • add pumpkin, applesauce, eggs and water and whisk together until well blended
  • pour into prepared bundt pan and bake for 60-65 minutes, until a toothpick comes out clean
  • cool for 30 minutes in the pan on a rack and invert on a platter to cool completely (will keep covered on counter for 4-5 days)

Notes

Can also be made in two standard loaf pans.  Wrap tightly in plastic wrap and then foil to freeze. I have also tried this recipe with 2 cups (400g) of monkfruit and 1 cup (200g) of sugar and it still tastes just as good!!  This brings the calorie count per serving down to 153 calories per serving.  I will try with 3 cups of monkfruit next and I'll be back to let you know how that goes.
