This is not your typical Oatmeal Raisin cookie. Cinnamon chips, swaping out the raisins for craisins and a dusting of white chocolate makes this cookie special! Try them, you'll love them!

Ingredients
  

  • cups (225g) all purpose flour
  • 1 teaspoon baking soda
  • 1 cup craisins
  • 1⅔ cup cinnamon chips
  • cups quick cooking oats
  • 2 sticks unsalted butter, room temperature
  • 1 cup (165g) brown sugar
  • cup (67g) sugar
  • tsp vanilla bean paste or extract
  • 2 eggs
  • 2 oz white chocolate bar

Instructions
 

  • preheat oven to 350°, line a cookie sheet with parchment paper and set aside
  • combine flour, baking soda, craisins and cinnamon chips in a bowl and set aside
  • cream together butter, sugar and brown sugar until light and fluffy
  • add vanilla and eggs until well combined
  • add oats and mix until mostly combined, then add flour and mixins and mix until dough comes together
  • using small cookie scoop drop dough onto cookie sheet 1½" apart and bake for 8-10 min
  • cool for two minutes, using a grater, grate a dusting of white chocolate over cookies and move to a rack to cool completely
